Tomato and bean salad

Nodig:

  • 5 beefsteak tomatoes
  • 500 grams black beans, drained
  • 500 grams corn kernels, drained
  • 5 sprigs fresh coriander, finely chopped
  • 1 lemon
  • 100 ml olive oil
  • 1 red onion, chopped
  • Salt, to taste
  • Black pepper to taste

Preparation:

Put a pot with enough water on fire.
Wash the tomatoes and make a cross through the skin at the bottom with a sharp knife. The tomatoes can then be placed in the pot of boiling water. Have a large bowl of ice and water ready. The tomatoes go into the ice bath after 1 minute. Once these have cooled, you can easily remove the skin.
Cut the tomatoes into cubes.
Then mix all ingredients in a bowl and let it steep for a few hours.
